Early X-Mas Toy

niiice. Try a pork shoulder, tastes betterer than wood chips. ;)

Pork shoulder is a little ambitious. Big hunks like that take a very long time to get tender. Like 8-12 hours, so keep it small at first. And also, very important- that layer of skin & fat is beautiful, but it adds big to cooking time. You need to get it off. Marinate the shoulder for a couple of days. Poke many knife holes through the pork and stuff those holes with a salty mix of garlic & parsley, maybe rosemary or cilantro- whatever you like, but salt the fuck out of it.
Dude, when I first got mine, I was smoking everything but the dog food. Ribs take a coupla measley hours. Chicken, the same. Enjoy- and don't just use hickory. Apple's good, Pear is good, cherry, my fave...

Hello to Dino and all the tunzworld folks. The smoker thing and Lakers remarks of the smoke smelling good made me think of why God says our sacrifice is a sweet smell to Him. Just like cooking meat is a sweet smell to us. The fleshly lusts of our lives given up on the altar of sacrifice smell like that sweet smell to God. Kind of cool. So this thanksgiving I hope we can all find a way to be a sweet smell by helping out those in need. God bless
